Mung Bean "Sausage Crumble" with Scrambled Eggs
INGREDIENTS:
1 cup Mung Beans (soaked and boiled)
1 tsp Dried Thyme
1/2 tsp Dried Rosemary
1/2 tsp Italian Seasoning
1/4 tsp Marjoram
1/4 tsp Turmeric
1/4 tsp Black Pepper
1/2 tsp Cayenne (or as needed)
Pinch of Cloves
Pinch of Nutmeg
Salt (as needed)
Eggs (as needed)
Greens (as needed)
Red chilis (as needed)
Olive Oil
INSTRUCTIONS:
Heat olive oil on pan, add all herbs and seasonings. Saute well without burning.
Add mung beans. Continue to saute. Adjust cayenne and salt as per your preference.
Slightly crush mung beans to “crumble”. I personally like them whole. Set mung beans aside.
Crack an egg, add salt and black pepper, greens, red chilis, and scramble. Serve with mung beans and toast.
