Hot n' Sweet Broccoli Quinoa Salad with Sweet Peppers
INGREDIENTS:
1 cup Broccoli (chopped)
6 Sweet Peppers (chopped)
1 cup Baby Kale (chopped)
1 cup Baby Spinach (chopped)
1 Jalapeno Pepper (chopped)
Red Onion (sliced, as needed)
2 tbsp peanut butter (or almond butter)
1 tbsp Honey
2 tsp Soy Sauce
2 tsp Red Pepper Flakes (or as needed)
3 tbsp Grapeseed Oil
1/2 tsp grated Ginger
1/2 tsp minced Garlic
2 tbsp Blood Orange juice
2 tbsp Lemon juice
Lemon zest (1 lemon)
INSTRUCTIONS:
Make peanut butter dressing - whisk peanut butter, blood orange juice, lemon juice, lemon zest, red pepper flakes, soy sauce, ginger, garlic, honey, and grapeseed oil.
Sauté broccoli with garlic, soy sauce, red pepper flakes, ginger, black pepper, and honey.
Toss it into a bowl of chopped baby spinach, baby kale, sweet peppers, jalapeno pepper, blood orange and red onions.
Add cooked quinoa and peanut butter dressing, and mix.
