Lemon Chia

INGREDIENTS:

  • 2 cups oat flour (or ground rolled oats)

  • 2 over-ripped bananas 

  • 2 tsp baking powder

  • 1/8 cup coconut oil (or 1/4 cup butter)

  • 5 ripe dates (blended with 1/4 cup water) or 1/3 cup cane sugar

  • 2 large lemon’s zest 

  • 1/2 cup coconut milk (or whole milk)

  • 1 tsp vanilla extract 

  • 1/4 tsp salt 

  • 1 tbsp Chia seeds

  • 1/2 tsp turmeric

INSTRUCTIONS:

  1. Mix all ingredients together.

  2. Distribute the batter in a muffin pan. Bake in oven preheated to 350F for 27 mins. You may serve them warm or cold.
