Lemon Chia
INGREDIENTS:
2 cups oat flour (or ground rolled oats)
2 over-ripped bananas
2 tsp baking powder
1/8 cup coconut oil (or 1/4 cup butter)
5 ripe dates (blended with 1/4 cup water) or 1/3 cup cane sugar
2 large lemon’s zest
1/2 cup coconut milk (or whole milk)
1 tsp vanilla extract
1/4 tsp salt
1 tbsp Chia seeds
1/2 tsp turmeric
INSTRUCTIONS:
Mix all ingredients together.
Distribute the batter in a muffin pan. Bake in oven preheated to 350F for 27 mins. You may serve them warm or cold.
