Purple Cabbage and Tuna Stir-fry
INGREDIENTS:
1 Purple Cabbage (chopped)
1 Yellow Onion (sliced)
1 tbsp Ginger paste
1 tbsp Garlic paste
2 tsp Turmeric
2 cans Tuna (or fresh tuna or salmon)
1/2 cup Shredded Coconut
2 tsp Cayenne Pepper
2 tsp Black Pepper
1 tsp Cumin
1 tsp Coriander
2 Green Chilis (chopped)
1 tsp Mustard Seeds
Curry leaves (optional)
Salt as needed
Coconut oil as needed
INSTRUCTIONS:
Heat coconut oil in pan and add mustard seeds (and curry leaves if available). Let it splutter but not burn.
Sauté onions with salt until lightly brown, add green chili, ginger garlic paste, cayenne, cumin, coriander and turmeric. Mix well and let the spices cook.
Add cabbage, black pepper and a little more salt, saute and let the cabbage cook to your preference.
Add tuna and shredded coconut and stir for a few minutes before serving. Serve with rice or chapathi/tortilla.
