Mung Beans and Collard Greens

INGREDIENTS:

  • 1 cup Mung Beans (soaked overnight in 2 cups water)

  • 1/2 cup Yellow onions

  • 1/2 tsp Cumin

  • 1/2 tsp Mustard Seeds

  • Curry Leaves (as needed)

  • Red Chilli powder (as needed)

  • 2 tsp Coconut oil

  • 1 tsp Turmeric

  • 1 tsp Ghee

INSTRUCTIONS:

  1. Heat water in a sauce pan and bring it to a boil. Add soaked mung beans along with its water and add salt. Let the beans cook to preference. Once cooked, strain and set aside.

  2. On a pan, heat coconut oil. Add mustard seeds and curry leaves. Add onions and let it fully brown. Add turmeric, red chili powder, and cumin.

  3. Add mung beans, mix, cover and let all cook.

  4. Towards the end add ghee. Serve with rice or chapathi/wheat tortilla.
