Kale and Brown Lentils
INGREDIENTS:
4 cups Kale (chopped)
1 cup Brown Lentils (soaked in 1.5 cups water overnight)
1 medium Yellow Onion (chopped)
2 Thai Chilis
2 tsp Cumin
1 tsp Mustard Seeds
1 tsp Salt (or as needed)
1/2 tsp Black Pepper
1/2 tsp Cayenne Pepper
1 tsp Turmeric
2 tsp Coconut Oil
1 tsp Ghee
4 cups water
INSTRUCTIONS:
Heat about 4 cups of water in a sauce pan. Once it comes to a boil, add soaked lentils and cover. Let the lentils cook until they are soft. This might take 5-8 mins. Once the lentils are cooked, strain, reserve some of the lentil water, and set aside.
On a skillet, add coconut oil. Throw in mustard seeds, green chili, and onion. Sauté all together until the onions are light brown.
Add kale, cumin, turmeric, black pepper, and cayenne pepper. Mix and let the kale wilt and cook.
Add lentils, salt, and mix. Add lentil water if it’s too dry. Finish off with a teaspoon of ghee for taste. Cover and let it simmer for a few minutes before serving.
