Mango Lassi

mango lassi oat muffins

INGREDIENTS:

  • 2  cups Oat Flour (or ground rolled oats)

  • 2 Mangos (pulp only)

  • 2 tsp Baking powder

  • 1/8 cup Coconut oil (or 1/4 cup butter)

  • 8 ripe dates (blended with 1/4 cup water) or 1/2 cup cane sugar

  • 1/2 tsp Cardamom

  • 1/4 cup yogurt

  • 1/2 tsp Turmeric

  • 1/4 cup Coconut milk (or whole milk)

  • 1/4 tsp Salt

INSTRUCTIONS:

  • Mix all ingredients thoroughly.

  • Distribute the batter in a muffin pan. Bake in oven preheated to 350F for 27 mins. You may serve them while they’re warm or cold. These taste better with a glass of cold milk.
