Mango Lassi
INGREDIENTS:
2 cups Oat Flour (or ground rolled oats)
2 Mangos (pulp only)
2 tsp Baking powder
1/8 cup Coconut oil (or 1/4 cup butter)
8 ripe dates (blended with 1/4 cup water) or 1/2 cup cane sugar
1/2 tsp Cardamom
1/4 cup yogurt
1/2 tsp Turmeric
1/4 cup Coconut milk (or whole milk)
1/4 tsp Salt
INSTRUCTIONS:
Mix all ingredients thoroughly.
Distribute the batter in a muffin pan. Bake in oven preheated to 350F for 27 mins. You may serve them while they’re warm or cold. These taste better with a glass of cold milk.
